Blueberry Oatmeal Protein Bars
I have several clients asking me about Quest bars becuase they love the taste, but they are really something I don’t recommend. For most people, 17 grams of fiber is A LOT to get in a bar when you’re already getting adequate fiber at meals. That’s almost an entire day’s worth of fiber!
Quick Tip: Too much fiber can lead to constipation and GI discomfort! Always add fiber gradually and increase your water intake at the same time.
I wanted to create a bar a bit more simple and lower in fiber. These Blueberry Oatmeal Protein Bars came out incredibly tasty and are full of whole grains, healthy fats and 7 grams of protein to keep you feeling full and satisfied in between meals!

Ingredients
- 1.5 cups oatmeal I used quick oats
- 1/2 cup whey protein powder vanilla works well
- 2 tablespoons ground flaxseed
- 1 pinch salt
- 1/4 cup pure honey
- 1/4 cup sun butter or almond butter or peanut butter
- 3/4 cup almond milk
- 1 teaspoon vanilla
- 1/2 cup blueberries

Instructions
- Preheat oven to 350 F. Line a small loaf pan with parchment paper.
- In a large bowl, mix together the oats, protein powder, ground flaxseed and salt. Set aside.
- In a separate bowl, combine sunbutter, honey, almond milk and vanilla. Mix until fully combined. Stir the wet ingredients into the dry ingredients until fully integrated. Fold in the blueberries.
- Pour batter into the loaf pan. Spread evenly, pressing down firmly.
- Bake for 18-20 minutes or until the top is golden brown. Remove from oven and allow to cool in pan ~ 20 minutes. Cut into 8 bars.
Recipe Notes
It doesn’t show almond milk on the list of ingredients so when I baked these they literally just crumbled apart. I added like 1/4 cup almond milk because I saw it in the instructions but that clearly wasn’t enough. How much should be used??

Unfortunately, it didn’t go as smoothly as planned and I’ve been finding some missing ingredients and directions on some of my recipes. I am almost through them all! I’ve updated the almond milk. Do you think these can be frozen?
I think so! I haven’t tried it though. Let me know if you do!
Have these been tried with old fashioned or steel cut oats? Would they come out too tough? I don’t know enough about the different types of oats. I will try with old fashioned and try to add a comment.
Hi Bob! I haven’t tried them with either of those types of oats, but the steel cut oatmeal will likely need more liquid/wet ingredients or they might not soften.
