Miso Baked Beef Meatballs
If you want to impress friends or guests, this easy miso baked meatball recipe will knock everyone’s socks off. The sweet and salty flavors of the miso paste go so well with the savory, umami flavor of the beef! These meatballs go great alongside some sautéed kale and roasted delicata squash (one of my favorites!).
Fun Fact: Umami is one of the 5 basic tastes (in addition to bitter, sweet, salty and sour). It’s often described as “meaty” or “brothy”.
Not to toot my own horn, but I know this meatball recipe is kick-ass because it is boyfriend approved. I always thought I’d impress my future husband with my cooking skills, but I totally feel like an amateur around this guy. He’s a former chef and restaurateur so when he says it’s good, I know it’s a serious winner.

- 1 egg
- 1 clove garlic minced
- 3 tablespoons white miso paste
- 3 tablespoons unsweetened almond milk use any milk you like!
- 3/4 teaspoon salt
- 1 teaspoon garam masala This is a common spice blend used in Indian cuisine. It is usually a mix of cumin, cardamom, cloves and other spices.
- 1/4 cup oatmeal I used Quick Oats
- 1/2 cup grated parmesan reggiano cheese
- 1 lb grass-fed beef I used 90/10

- Preheat oven to 400° F. In a large bowl, whisk together the egg, garlic, miso, milk, salt and garam masala until thoroughly combined.
- Mix in the cheese and oatmeal. Add the beef and gently mix with your hands until all ingredients are combined (don't over mix!).
- Working one at a time, scoop out 2 heaping tablespoons of the mixture and roll into balls between your palms. Place on a foil-lined baking sheet (you should end up with about 15-16 meatballs).
- Bake meatballs until lightly browned on top and cooked through, about 20-25 minutes.
