Tofu, Mushroom and Farro Stir Fry
Easy, tasty stir-fry! If you’ve never tried farro before it’s sort of like brown rice, except it’s chewier and it has nutty, earthy flavor. Farro contains more fiber than brown rice and quinoa, and is a good source of zinc, iron, magnesium and B3. You can swap it out for any grain you have on hand.

Ingredients
- 1/2 cup uncooked farro
- 1 teaspoon olive oil
- 1/2 large onion thinly sliced
- 1 package baby bella mushrooms
- 1 package light firm tofu
- 1 tablespoon nutritional yeast
- 1 teaspoon Bragg’s Liquid Aminos
- salt
- Garlic Powder
- Paprika
- Oregano

Instructions
- Cook the farro as per package directions.
- Spray a large non-stick skillet with cooking spray. Add one teaspoon olive oil. Add the onion and cook until soft, about 4 minutes.
- Add 1 package of baby bella mushrooms and cook until soft (about 5 minutes). Drain the package of tofu. Crumble into the pan (I use a spatula to break it up or my hands). Add salt, garlic powder, paprika, oregano, and the nutritional yeast. Stir to combine.
- Add the cooked farro and Bragg’s Liquid Aminos (or soy sauce). Stir together to combine and serve!
Recipe Notes
Add some avocado to add healthy fats to this meal!
