Pasta with Butternut Squash Sauce
This warm and hearty pasta dish with butternut squash sauce is perfect for fall! It’s super simple to make and only requires a few ingredients.
I used shell shaped pasta, but feel free to use any pasta you want!
This is great as a side dish, but you can make it a meal by adding some cheese, grilled chicken, and spinach.

Ingredients
- 4 ounces small pasta shells or pasta or choice
- 2 teaspoons olive oil
- 2 cloves garlic, chopped
- 12 oz frozen box of cooked butternut squash
- 1/4 cup unsweetened almond milk or milk or choice
- salt and pepper to taste

Instructions
- Cook pasta according to package directions.
- While the pasta cooks, heat a large skillet over medium high heat. Add the frozen squash plus 2 tablespoons water. Cover and cook, stirring occasionally to help it defrost.
- In the meantime, heat the oil in a small skillet over medium heat. Add the garlic and cook until soft, about 4-5 minutes.
- Once the squash is heated through, stir in the cooked garlic. Remove from pan and allow to cool for about 10 minutes.
- Add the squash, milk and salt and pepper to a blender or food processor. Blend until combined. Toss with the pasta and serve!
Recipe Notes
Add some grated parmesan cheese if you like (highly recommended)!
