TERIYAKI BRAISED CABBAGE WITH GOAT CHEESE
Sounds weird, I know. But I promise it’s delicious.

  1. Roughly chop the red cabbage (you can also chop in a large food processor).
  2. Heat the olive oil in a large pan over medium high heat (You may need to do this in two batches if your pan isn’t big enough! Otherwise your cabbage will not cook evenly).
  3. Cook for about 5-10 minutes until the cabbage begins to soften slightly. Add about 2 tablespoons low-sodium teriyaki sauce, salt and pepper to taste (don’t go crazy on the salt since the sauce is already salty!). Cover the pan with a lid, and cook for about 20 minutes until the cabbage is soft, stirring occasionally.
  4. At the end of cooking, stir in the goat cheese until melted through.
