Blend the ricotta cheese, egg beaters, orange juice, orange zest and vanilla (I used my Ninja).
Mix together the dry ingredients.
Heat a non-stick pan over medium-high heat and coat with cooking spray. Place batter by the tablespoon onto the pan. Cook until the edges set and the pancake starts to form bubbles. Flip.
Layer with greek yogurt mixed with a little orange juice and Truvia. Top with slivered almonds and orange zest. YUM!
